Selected by breeder Jim Myers to reimagine the Roma tomato, this purple wonder is packed with phytonutrients and perfect for processing any which way. Midnight Roma shines for its quick cook time and memorable flavor, producing sauces and pastes with layers of sweetness, acidity and rich umami.

For sauce perfection, cut tomatoes in half and core. Place in a pot and bring up to a simmer over medium heat, smashing to release juices. Cook for 15 to 20 minutes, stirring often, then pass through a food mill. Return to pot and continue simmering for 1 to 2 hours, depending on desired consistency.
Store tomatoes at room temperature—do not refrigerate. Wash thoroughly before use.
