Upstate Abundance Potatoes
Currently available in the Greater Boston region from October to December
Behind The Seeds
Selected by second-generation potato breeder Walter De Jong, this versatile little potato is delicious roasted, smashed or boiled. The creamy flesh is naturally packed with flavor—no butter required.
"How do you judge a potato? Taste it simply boiled. This one is so delicious and creamy you don’t need to add butter."
— Dan Barber, chef and Row 7 co-founder
Cooking
Simply boiled: in a pot, cover potatoes with water and add salt—don’t stop until it tastes like seawater. Bring to a boil, and simmer until fork-tender. Drain and serve as is. Or, a little fancier: press each boiled potato until flat. Fry until golden—about 5 minutes per side. Add some flaky salt (or your preferred toppings) and rejoice.
Storage
Store potatoes in a cool, dark place. Wash before use.
