Cooking
Simply boiled: in a pot, cover potatoes with water and add salt—don’t stop until it tastes like seawater. Bring to a boil, and simmer until fork-tender. Drain and serve as is. Or, a little fancier: press each boiled potato until flat. Fry until golden—about 5 minutes per side. Add some flaky salt (or your preferred toppings) and rejoice.
Storage
Store potatoes in a cool, dark place. Wash before use.
